Curriculum

The Hospitality Management Department  consists of seven main programs:

The Associate of Applied Science and the Certificate of Achievement Degree in Casino Management are designed to help students seek employment in entry­- level or supervisory positions. For those currently employed, these programs will aid job advancement, professional growth and career mobility within the gaming industry. Students may continue studies at a four-year institution to pursue a bachelor's degree.

The Casino Management program, at CSN is the only program in the U.S. to be accredited by the Commission on Accreditation of Hospitality Management (C.A.H.M.)

 

The Associate of Applied Science Degree and Certificate of Achievement with an emphasis in Hotel Management are designed for those seeking employment in entry level supervisory positions or for those currently employed in the hotel industry, an opportunity for job advancement, professional growth and career mobility. The Associate of Arts Degree, Hospitality Management  Emphasis, is specifically designed for the student  who intends to tansfer to the William F. Harrah College of Hotel Administration.  This AA degree is fully articulated with UNLV and the hotel college. The special program requirements are included in the hotel college core prerequisites at UNLV.

The Food and Beverage Management Program at CSN is one of the fastest growing programs of its type in the nation. With the addition of the 50,000 square foot Resort and Gaming Facility in 1995, which includes five kitchens, a 120 seat restaurant, a bar, multiple classrooms and a casino training lab, the program has taken a leading role in Hospitality education in the southwest.

Russell’s Restaurant is the training center for the Culinary Arts and Food & Beverage management programs. At Russell’s, Culinary students prepare the food and Food & Beverage Management students manage and operate the restaurant. This is all done under the direction of qualified faculty.

CSN provides a quality, professionally oriented program for anyone wishing to enter and/or advance in the field of culinary arts. Some of the most exciting employment opportunities in the culinary arts profession are in Las Vegas. The "Entertainment Capital of the World" caters to millions of tourists annually. CSN Culinary Arts students learn to master the fundamentals of cooking,  with hands-on preparation of various cuisines from Basic Cookery and  American Regional to International and French cooking.  The public can sample students' masterpieces in Russell's Restaurant, on the Cheyenne campus.

Students in the CSN Culinary Arts programs may earn a Certificate of Achievement or an Associate of Applied Science Degree with an emphasis in Culinary Arts.

  •  Pastry Arts

     

    CSN provides a quality, professionally oriented program for anyone wishing to enter and/or advance in the field of baking and pastry arts. Some of the most exciting employment opportunities in  the baking and pastry arts profession are in Las Vegas. The "Entertainment Capital of the World" caters to millions of tourists annually. Students in the CSN Culinary Arts programs may earn a Certificate of Achievement or an Associate of Applied Science Degree with an emphasis in Pastry Arts.Students are taught to master the fundamentals of baking and pastry arts with emphasis on hands-on preparation of various techniques. From baking and pastry, to chocolate and sugar art, the public can sample the students' masterpieces in Russell's restaurant.

The Travel and Tourism Program is designed for persons seeking successful careers in the growing field of travel.  The Certificate or AAS Travel and Tourism Degree Program will enable you to enter a wide variety of positions within the Hospitality/Tourism career field.  Areas of career opportunity include conventions/meetings/trade shows; cruising; accommodations/lodging sector; travel agencies; recreational activities; special event management; travel and transportation companies; tour and sightseeing industries and much, much more.  The most important  thing to remember is our curriculum is practical, timely and courses emphasize immediate transfer.
